Gordon Ramsey Pasta Dough and My Fettuccine Alfredo Sauce


I love this pasta recipe and have tried it twice and every time there was no pasta left. That being said, this comfortably feeds a family of four.
* This pasta dough recipe is Chef Gordon Ramsey's.
  • Ingredients
    • 2 cups flour
      • Gordon Ramsey recommends 00 flour, but I just used all-purpose flour.
    • Salt
      • As much as you would like; I didn't use any.
    • 1 teaspoon olive oil
    • 4 whole eggs, + 2 egg yolks
    • For gluten-free, try this recipe. 
  • Making the dough
    1.   "Put the flour onto a cold surface (marble) and use a fork to form a well in the center with equal walls.
    2.  Season the center of the well with salt and add olive oil. 
    3. Crack eggs into a bowl and gently whisk together. 
    4. Add a third of whisked eggs into well. Use the fork to gradually incorporate the flour into the eggs.
    5.  Once mostly soaked in, add another third, continuing to mix into the flour, careful not to let eggs slide out.
    6.  Create another well in the middle of the flour and egg mixture and add the remaining egg, combining until the dough looks like crumbs. 
    7.  Once all the egg is incorporated, flour your hands and begin forming a ball. Continue to flour your hands and knead the ball of dough until firm and elastic, turning and twisting the ball for about 10 minutes. 
    8. Wrap in plastic and rest for at least 20 minutes before rolling." *

  • Rolling pasta
    • Use a Machine- I use the Marcato Altas 180 Wellness. Never Wash or wet your machine. Always flour your hands- both sides, the surface, and the machine. Dust the machine every time you roll the pasta through the machine.
      • You can use this article to purchase a pasta machine.
    • First, flour everything.
    • Take the dough out of fridge after twenty minutes. 
    • Roll out your dough so it fits the width of your machine. 
    • Begin rolling your dough through the machine, starting at level 0 (go through 0 two to three times) and going through 1 (once), 2 (once) and so one until you reach level 5. Go through these two times. 
      • I stopped here, but if you want to make thin spaghetti or thin noddles you can continue. 
      • Pasta is not as fragile as you might think. 
      • Have fun with it! 
    • Now, add on the pasta- cutting extension piece and attach the crank onto it.
    • Roll the dough through it, making thin fettuccine noddles. They will be long, but you can cut them in half before cooking them,. 
      • You might need help from someone else with this step- the pasta is long and it's tricky to feed it through the machine.
      • Be careful to make sure the pasta doesn't get stuck onto its self! Use a lot of flour, but make sure you don't dry out the pasta!
  • Cooking the Pasta!
    • Boil a pot of water
    • Add half of the noodles, cook for around 5- 7 minutes. 
      • Don't judge it based on time, judge it based on the taste!
      • If you think it's cooked, it is. Fettuccine tastes better less cooked.
  • Fettuccine Alfredo Sauce
    • I created this from all the types of dairy in our house I could find, and it tasted good, so it's fine if you don't have cream- use milk, more butter, and more sour cream!
    • Ingredients:
      • cream
      • half and half, whipping cream, whatever works!
      • butter
      • cheese
      • sour cream
    • Put a small pot onto the stove on low heat.
    • Put in cream and stir until warm. 
    • Add other ingredients until you like the taste!
      • STIR CONSTANTLY!

In the end, we decided not to purchase masterclass. I learned all I wanted to about pasta in that one class, and I would much rather just find free recipes online.
